You could do this and lots of people do use this in order to cover the observation requirement for this unit.
However I could suggest an alternative that I feel is a more naturalistic approach. When I plan this unit I include the following:
A general observation of the candidate discussing where I have seen the candidate involved in learning and development. This may be as part of work or for the NVQ.
Following an routine observation (for the other NVQ units) I will have an reflection discussion where me and the candidate discuss their practice, what they did well and what could be improved.
